You're not missing anything — I steered you wrong earlier, and I'm sorry. Seerr has no Jellyfin-to-Plex switch in Settings because it locks to one media server during its first-run setup, and SparkBox's automatic setup wires that to Jellyfin. So no option showing is expected, not a bug. This Seerr build does support Plex and Emby, but pointing it at Plex means giving Seerr a clean first-run setup with Plex chosen — there's no one-click toggle today. The Plex login loop you hit after clearing the config is a separate snag I don't want to guess at, so I've flagged it to Tom to get you the right steps.
