You've read it right, and you're not missing a setting — Audiobookshelf is the one app without a folder option yet. Media, photos, books and manga can each be pointed anywhere you like, but audiobooks got left out, so it always reads the audiobooks folder inside SparkBox's own data folder (usually /opt/sparkbox/data/audiobooks — or whatever data folder you picked at install, plus /audiobooks). Tidiest way around it today: mount your drive at that exact folder rather than at a separate path. Audiobookshelf then reads straight off your drive, and an update won't undo it. Anything you already put there with Filebrowser just sits hidden underneath while the drive is mounted — nothing gets deleted. I've flagged the missing folder setting to Tom — he handles these personally.
