1.5.41: pinned image tags, fixed gluetun startup, bumped Jellyfin memory

Shipping 1.5.41 with three stability fixes that matter for production setups. The big one: I pinned all three floating image tags in the media bundle. Seerr was on :latest, which means a tag push overnight could silently upgrade every install and break your request flow with zero rollback path. Now gluetun, seerr, and flaresolverr are all locked to specific semver tags. Two more fixes for real-world pain: gluetun's healthcheck was timing out on slow WireGuard handshakes (bumped startperiod 30s → 75s), and Jellyfin was OOM-killing itself mid-4K-transcode on 1GB (raised to 2GB). Also tightened Seerr's healthcheck to actually verify the API is alive, not just that the web server answers HTTP. And I corrected the media module's RAM estimate from ~2GB to ~3GB — low-RAM NAS users were hitting silent OOM because the number was understated.
