Good question — right now the media pack installs as one bundle, because the apps are wired together behind the scenes (the downloader, the finders, and Jellyfin all talk to each other out of the box). There's no checkbox yet to leave individual ones out. A couple of extras do have on/off switches in the dashboard settings (Lidarr for music, Notifiarr for notifications). For the rest, it's totally fine to just ignore the ones you don't use — an app sitting idle uses barely anything. I've logged pick-your-own-apps as a feature request though, it's a good idea.
