Two easy answers. That update message inside Radarr is safe to ignore — on a SparkBox you never update Radarr from inside Radarr. Instead, open a terminal on your box and run: sudo sparkbox update and it grabs the newest version of Radarr (and all your other apps) in one go. For the movies: adding something in Radarr just puts it on the wanted list — it won't show up in Jellyfin until it has actually finished downloading. In Radarr, click Activity on the left to see what's still downloading. Once a movie finishes, Jellyfin picks it up on its own within a few minutes. If Radarr shows a movie as downloaded and it's still missing from Jellyfin, tell me and we'll dig in.
