Good thing to plan for. The simplest safety net: in your router's settings, set a SECONDARY (backup) DNS to a public one like 1.1.1.1, with your Pi-hole's IP as the primary. Then if Pi-hole ever stops, your devices automatically fall back to 1.1.1.1 and keep working — you just lose ad-blocking until it's back up. One small trade-off: with a backup set, some devices occasionally use it even when Pi-hole is fine, so a few ads can slip through now and then. For most people the safety net is worth it.
